While we might think of pb&j as being mostly a kid thing, these little sandwiches also make a delicious snack for adults of all ages! 

Pb&j graham cracker sandwiches are made from three simple ingredients. You can modify this as you desire, but the basics are peanut butter, jelly, and graham crackers. 

One of the great things about theis PB&J Graham Cracker Sandwich is that they are very simple to prepare, so even the responsible kid can make one for themselves! These are also relatively healthy snacks that kids will get very excited about. This snack or lunch will give you a mixture of sweet and savory tastes. I made a few of these for my nieces for a snack, and they were so excited to eat them. 

The best part about these sandwiches is not only are they easy to make, but they are also budget friendly. You can buy some pre-made sandwiches, however, these are a much more economical version, to buy the ingredients and make them on your own.

There are two different ways that you can enjoy these. The first is to buy them at your local grocery store. You can sometimes find them located in the freezer or snack section. Or, a better way would be to make them at home. It is a simple process to create them, and they can be made ahead and stored if you would like.

Most of us would choose to use a package of graham crackers to make our graham cracker pb&j sandwiches. However, if you wanted, you could also make your crackers from scratch. To do this, you will need to include basic ingredients such as; butter, brown sugar, baking soda, baking powder, salt, all-purpose flour, wheat flour, milk, and granulated sugar.  To make the crackers, mix all the ingredients together and then form the dough into crackers and bake. The choice is up to you if you decide to purchase graham crackers or make them. No matter what you choose, both will work well and taste delicious! 

Different Varieties

Not only can you make a classic version using creamy peanut butter, and strawberry or grape jelly on graham crackers. You could also try to mix it up by using crunchy peanut butter, organic, chocolate peanut butter, or even Nutella. Then there is the jelly. How To Make:

There are a few different combinations we have talked about for making these tasty treats. To make pb&j graham cracker sandwiches, you can make a quick and easy version, make your crackers from scratch, and even dip your final product in chocolate, just to name a few ideas. Let’s talk about how you do each one of these ideas. 

Simple PB&J Graham Cracker Sandwich:

This way is quite straightforward. To create these, choose your kind of peanut butter, jelly, and graham crackers. If you want to make it look a little fancy, then you will also need a sandwich bag. Prepare your graham crackers by laying them out. Then place your peanut butter and jelly into their own plastic bags. Please note, this will not work with crunchy peanut butter. Once you have them inside the plastic bags, cut the corner out of one side of each bag. You will want your opening to be small. Use this as your piping bag. Using your peanut butter and jelly in bags, squeeze each one over the crackers into whatever design you desire. Place an additional cracker on top to form a sandwich. 

Crackers From Scratch:

In a mixing bowl, add ½ cup butter and 1 cup brown sugar. Beat until it begins to get creamy. Stop mixing. Add in 1 tsp vanilla, 1 tsp baking powder, ½ tsp salt, and mix together just until it is combined. Add in 1 cup all-purpose flour, 2 cups whole wheat flour, and ½ cup milk. Mix well after all ingredients have been added. Your dough will be very thick. 

Roll your dough into a ball and then slightly flatten it out. Wrap in plastic wrap and place in the refrigerator for at least four hours or overnight. 

Preheat your oven to 350F and then pull the dough out of the fridge. Roll dough out on a lightly floured surface until it is about 1/8 inch thick. 

Cut with a pizza cutter into squares or rectangles. Place squares onto a parchment paper-lined cookie sheet. Use a fork to create indents and sprinkle the top of all crackers with granulated sugar. 

Bake for 8 to 12 minutes or until the edges begin to turn gold. Allow for cooling to room temperature. 

Chocolate Dipped PB&J:

Create pb&j sandwiches and place them on wax paper or plastic wrap in the freezer. Allow them to freeze for four hours or until solid. 

In a bowl, add ¼ cup heavy cream and microwave until it just starts to boil. Pour into a bowl with ¾ cupchocolate chips and allow to sit for three minutes. After three minutes has passed, stir until cream and chocolate are completely combined. 

Take your frozen sandwiches and dip them into the melted chocolate. Place your sandwich that is now covered in chocolate on wax paper and allow to set. You can also place your finished crackers in the fridge or freezer to speed up the chocolate hardening process.
