To soften butter directly from refrigerator, microwave unwrapped stick on high 10-15 seconds. 1. Heat oven to 375 degree F (or 350 degree F for dark or nonstick cookie sheet). Drop cookies: stir cookie mix, 1 stick softened butter and 1 egg in medium bowl until soft dough forms. Cutout cookies: stir cookie mix, 1/3 cup softened butter and 1 egg in medium bowl until soft dough forms. 2. To make drop cookies: Drop dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheet. Or: To make cutout cookies: Roll dough on floured surface until 1/4 inch thick. Cut with 2-inch cookie cutter and place 1 inch apart on ungreased cookie sheet. 3. Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute before removing from cookie sheet. Cool completely; store in airtight container. High altitude (3500-6500 ft): no change. Betty's tip: allow cookie sheet to cool between batches.

  • 1,5 sticks Butter Leave butter at room temperature for about 2 hours before using.
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 2 tbsp Flour or powdered sugar You will use one of these to sprinke the surface so your dough won't stick to it.

Instructions 

  • Beat the eggs with softened butter.

  • Add lemon zest from one lemon and vanilla extract, then mix again.

  • Leave the dough in the refrigerator for about 30 minutes.
