later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. American brewers, inclined as they are to experiment with the limits of beer styles, have pushed American Stout to high levels of malt and hop character. Thus, they’ve “doubled,” or “imperialized,” American Stout into a very strong brew. Expect a very robust, full-bodied stout with lots of complexity in aroma and flavor, with many examples surpassing Russian Imperial Stout beers in strength and intensity. Look for a dark, virtually black color displaying the beer’s roasted malt soul. The rich malts combine with generally high hop aromas and flavors along with alcohol notes and esters of dark fruits. All elements are typically balanced, exhibiting a layered complexity, with many examples aged in whiskey or bourbon barrels for additional levels of aroma and flavor. American Imperial Stout and Imperial Stout beers may be cellar-aged, during which the beer’s character will evolve. These are beers for sipping and savoring. Goose Island Bourbon County Brand StoutOur rich Imperial Stout is blended from a mix of bourbon barrels from distilleries such as Heaven Hill, Wild Turkey and Buffalo Trace, each aged in freshly emptied bourbon barrels for 8-14 months. Goose Island Bourbon County Cherry Wood StoutThis year, we took wood complexities to another level by doing something we've never done before: we took fully-matured Bourbon County Stout and finished it with toasted fruitwood—specifically, honeycomb-shaped cherry wood chips. The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, revealing complex characteristics like red fruit, ripe cherry, and light toffee, which are not found in the original oak barrel itself. Brewers Paul Cade and Jason Krasowski bonded over their love for a classic cola while creating the Classic Cola Stout. Combining the refreshing nature of classic cola and picking up the flavor profile from a whisky cola, we added lime and orange juice and zest, plus coriander, cassia bark, nutmeg, brown sugar, and vanilla to bring out the complex characters of the classic drink. Goose Island Bourbon County Brand Fourteen StoutFor the first time ever, we're digging into the Proprietor's (Chicago-only release) vault and bringing back a fan favorite with Bourbon County Fourteen Stout. But this time, it's with a twist. We're paying homage to the popular Proprietor's 2014 recipe, but upping the rye ante by adding rye to the mash bill.
